For three generations, the Maison Troisgros has been at the top of its art. Mixing traditional cuisine and new taste sensations, playing on contrasts and superimpositions, Michel Troisgros perpetuates the art of gastronomy. His inventive cuisine is full of flavours. After the lemon, then the red currant, it is the fromages frais which come onto the stage, in particular the Fjord for its remarkable smoothness, half-way between fromage blanc and yogurt. For this great Roanne-based chef, culinary innovation is elevated to the rank of a principle: every month, a different menu is worked out for gourmets. And the house wine, « Les Blondins », a fruity, voluptuous and lively wine, accompanies the dishes. The grape for this wine, the Gamay grape, grows on the Côte Roannaise and possesses the mineral qualities of the terroir thanks to its south facing exposure and sandy soil.

The Maison Troisgros in Roanne is also a 4-star Relais & Châteaux hotel, which Marie-Pierre, Michel’s wife, decorates with talent. Her sense of aesthetics and detail is in perfect harmony with the cuisine. The hotel proposes 16 bright quiet rooms, with soft tones, natural materials and clean lines. In the centre, a garden lined with tall trees and ball-shaped shrubs promotes relaxation. For fun lovers, a gourmet library has been created where paintings by contemporary or impressionist artists underline the atmosphere. And a brand-new relaxation space with a sauna-sanarium is available. Thanks to the restaurant Le Central, a café/grocery shop set up by Michel and Marie-Pierre in the 20s style hotel adjoining the Troisgros restaurant, the restaurant’s cuisine becomes affordable to everyone. In this modern, relaxed establishment, with a strong identity, the chefs work in front of the clients. The eclectic repertoire includes traditional and fancy dishes. In the shop part, the large cupboards are stocked with carefully selected gourmet items and wines. Finally, the great innovation by Michel and Marie-Pierre Troisgros is the opening of « La Colline du Colombier »: an inn, two gîtes and three “cadoles”, from the name of the old huts of Burgundian vineyards, built on stilts, made of wood, steel and canvas. A haven of peace 15 kilometres from Roanne going towards Burgundy, overlooking the Loire and the Canal. The inn proposes a menu at € 34 and a short à la carte menu where Charolais beef and eggs, fresh and organic, are the stars.
